Apple Drop Scones

These are my special treat… Tastes like I’m eating something that’s bad for me.  And with only 40 cal and 5g or carbs you can’t go wrong…  By the way, if you haven’t noticed I use my magic bullet blender for most of my recipes so I’d suggest you buy one.

Apple Drop Scones

1c spelt flour

3/4 c oat flour (I just grind up oats in my magic bullet)

4tbs baking powder

1tsp cinnamon

½ tsp baking soda

1/8 tsp sea salt

2 tbsp honey

¼ cup olive oil (but I use macadamia nut oil or coconut oil)

1 c non- fat plain yogurt

1 c apples, unpeeled, shredded with a grater

Sweet oat topping

1/4c oats

1tsp oil

1tsp organic evaporated cane juice or sucanat (cane sugar)

  1. Preheat oven to 400 Degrees F
  1. Wisk together dry ingredients
  2. In separate bowl mix honey, oil, yogurt and apples
  3. Add wet ingredients to dry.
  4. Spray backing sheet with light cooking spray and drop dough by a rounded tablespoon onto sheet, 1 inch apart.
  5. Sprinkle sweetened out topping on each biscuit if desired.
  6. Bake 10 – 15 min.

Makes 24 scones

Cals: 40,  Fat: 1.5g,  Carbs: 5g, Sugars: 1g, Protein: 1g
